cake time! For our loved ones we have a blueberry cheesecake for coffee today (no baking). 😋⠀

What you need: (24/26 cm springform pan)⠀
.⠀
200g biscuits of your choice, e.g. butter biscuits or wholemeal biscuits⠀
100g melted butter⠀
.⠀
600 g cream cheese (double cream level)⠀
200 g sour cream⠀
200 ml cream⠀
100g sugar⠀
4 sheets of gelatin⠀
1 lemon (juice + zest)⠀
1 tsp vanilla essence ⠀
1 - 2 packs of fresh blueberries⠀

And this is how it works: ⠀

Crumble biscuits (using a rolling pin or food processor), stir in melted butter. Pour the biscuit mixture into a springform pan, press down and refrigerate.⠀
Soak gelatin in water. ⠀
.⠀
Mix cream cheese and sour cream. Stir in lemon zest, sugar, lemon juice, vanilla essence. Dissolve the squeezed gelatine in a saucepan. Add 4 tablespoons of the cream cheese and sour cream mixture to the saucepan and stir. Stir the gelatine mixture into the remaining cream cheese mixture. ⠀
Fold in the whipped cream. ⠀
Spread the desired amount of blueberries (approx. 1 packet) on the biscuit base. Spread the cream cheese mixture over the blueberries and spread evenly. Decorate with blueberries if desired. Place in the fridge for at least 3 hours. ⠀
